A bowl of shallot salad

Chefs love to talk food. And, we love to know what they are cooking – both professionally and at home. We always ask about their favourite dishes. Often, they are amazingly simple recipes like this Quick and Easy Shallot Salad.

This is a dish that one of the CGH Earth Experience Hotel‘s chefs – Francis Noble of Brunton Boatyard – shared. You might remember, he taught us how to make Keralan Chicken Ishtoo (Stew).

Anyway, chef Francis got a smile on his face when we asked him about it. “This Quick and Easy Shallot Salad was something I made for my college roommates when we lived on a very low budget,” he said, “But, that doesn’t matter, those were great times and it’s still my favourite.” Taste it and you’ll see why!


Quick and Easy Shallot Salad Recipe

Yields
2 servings (easily multiplied)

Ingredients

5 – 6 shallots, cut in lengthwise slices
½ lime, juiced and juice reserved
1 Tablespoon coconut oil
2 teaspoons tamarind chutney
½ teaspoon paprika
Salt – to taste


Method

  1. Place the shallot slices, lime juice, coconut oil, tamarind chutney, paprika and salt in a bowl and toss to coat evenly.
  2. Enjoy with your favourite curries or with naan or appams as a snack.
