Harsha’ Instant Coconut Chutney: A Taste of Karnataka is a recipe that comes from our friend and guide Harsha S. Harsha loved showing us his homeland. He lives in Bengaluru but was born in Mysuru. He guided us during our travels between these two cities. And, he always wanted to contribute in the very best way to everything we were doing. So, we were not surprised when he even had a delightful recipe to share.

During our visit to Shashikali Ashok’s in Mysuru, while she was preparing a banana leaf Thali for us. Harsha said, “I have an instant chutney I’ll make for you!” And, he did. We loved it so much we’re including it here.

Instant Coconut Chutney Recipe

Yields
4 servings

Ingredients

¼ cup finely diced red onion or shallots

1 cup ground (fresh or frozen) coconut

1 teaspoon salt

2 teaspoons olive oil

1 teaspoon chili powder

 


Method

  1. Combine the onion, coconut, salt, oil, and chili powder in a bowl and stir to combine.
  2. Enjoy with dosas, fish or meat.
