

When it comes to the faces of Marari Beach, the team at CGH Earth Marari Beach radiate peace and contentment. They seem to have found their own heaven on earth. We enjoyed time with Chef Thomas, the head chef, and Mr. Chellapan, the resort’s gardener.
Chef Thomas has worked for CGH for many years. He is proud of the sustainability efforts of the brand and this resort in particular. First, we toured the water filtration plant. It has allowed the resort to get rid of single-use plastic bottles. Then, we did an extensive tour of the onsite farm. This is where Mr. Chellapan raises organic vegetables. It is a masterpiece of gourds, tomatoes, eggplants, chilies, and seasonal vegetables of all types. We were in awe.
While at the resort, we also enjoyed the skills of Ayurvedic practitioners. There’s also a devoted octogenarian yogi who teaches classes in the garden every morning. And, each afternoon we enjoyed the company of local chai wallahs at the 4 p.m. tea time.



The Chai Wallah Experience
From their Chaayakadas (tea carts), the local chai wallahs brew their special blends with care. Once the thick, milky chai is ready, they cool it by pouring it in long liquid ribbons. And, for show, they pour it from full arm’s length above. The tea flows from one vessel to another—back and forth. They never spill a drop. And they don’t stop until it reaches the perfect temperature for sipping.
